Y’ALL know I LOVE to celebrate. Especially outdoors over a fun, festive, satisfying, healthy-ish meal.
Enter May 5th!! Cinco de Mayo.
Seriously, what’s not to love about Cinco de Mayo?! It’s usually a warm, sunny, ATX day. Skinny margaritas {or my Paloma’s} are on the menu, + tacos, chips and guacamole are flowing al fresco on the patio!! YES!
If your like me, and already starting to plan your festive, #familydinner keep reading. I’ve planned a yummy menu that feels splurge worthy, but is actually pretty balanced and clean.
The Appetizers
Avocado Slaw

I just discovered this recipe last week on Camille Styles, and have already enjoyed it twice. It’s yummy as a stand alone salad with pumpkin seeds, or the perfect accent to your tacos.
Easy Guacamole
This recipe by Gimme Some Oven checks all the boxes. Quick, easy and totally flavorful. It’s not too spicy, not too citrus-y, it’s just right! I love to enjoy our guac with Siete Grain free chips, bell peppers, radish, celery, cucumber and carrots. Make a big veggie + guacamole display for everyone to munch on while you prepare the mains, and you will have a happy family!

The Spicy Margarita
Get excited for Paleo Jalapeno Margaritas by Mary’s Whole Life!! Refreshing, squeaky clean and have just the right amount of kick. I use Lalo Tequila and it’s divine! If Grapefruit Paloma’s are your thing–give my clean, no sugar added recipe a try!!

The Mains
Salsa Verde Chicken Enchilada Bake
Get excited for a one skillet dinner! This easy meal allows you to actually enjoy the appetizers + a margarita while the oven does ALL the work!!
Defined Dish has really mastered the art of a quick, week night dinner that is swoon worthy! It’s bustling with the kind of flavor that leads your taste buds to believe you’ve been marinating all day.. Jokes on them! 🙂
Enjoy it with this mouth watering Avocado Tomatillo Salsa

Chimichurri Fish Tacos
Fish tacos are the way to my heart, but this flavorful recipe by Camille Styles is really special. If you are an herb lover, you will enjoy the textural, savory flavor the chimichurri brings the crispy halibut! Pairs perfectly with a skinny margarita!
Fish not your thing? Give these Sheet Pan Turkey Tacos a whirl! I also love this round up of taco bar ideas in case you are hosting a party, or your family has a wide ranging palette.

Mexican Pizza
Get your kids just as excited for Cinco de Mayo as you are, by making a pizza! This veggie version is gluten free , topped with flavorful veggies, and totally tasty! Let the kids have fun making their own, while you enjoy a salty, skinny margarita.

Carne Asada
Saved the best for last!! This is the recipe I’m planning to make, along side this Cilantro Lime Rice. Juicy, tender grilled flank or skirt steak full of incredible flavor and better than any restaurant!! I love that I can make a couple pounds, and everyone can enjoy it their own way! Perfect for stuffing tacos, burritos, salads, or serve it with Avocado slices & salsa!

Cilantro Lime Rice–The Perfect Side

Don’t feel like cooking? If you live in Austin, you have some serious culinary options. Here are some of my favorite local places.
Nixta Taqueria-— The MOST AMAZING little place!
Two years ago we scooped the kids and celebrated Cinco at El Naranja– The entire restaurant is gluten free, healthy-ish, scratch made & totally authentic. So good!!
