The Summer Salad I Can’t Quit Eating

Is there anything better than a spicy arugula, refreshing cantaloupe salad on a hot summer day?! It’s a flavorful combination packed with fiber, fresh veggies and hydrating seasonal fruit! Perfect for summer BBQ’s or a solo lunch outside!

This easy, colorful, delicious summer salad has been on repeat around here!! We love to enjoy it with grilled chicken and a drizzle of pesto! But it’s also a great stand alone meal too! Nourishing but light!

This is totally a salad your kids can get behind! It’s fresh and vibrant and they can eat it with their fingers!! Simply deconstruct the salad and remove the onions and arugula!

Arugula Cantaloupe Salad

An easy, colorful, flavorful salad that is made with seasonal ingredients and ready in minutes
Servings: 4


  • 3 Cups Organic Arugula
  • 1/2 A Whole Cantaloupe cubed
  • 1 English Cucumber chopped
  • 1/4 Cup Red Onion
  • 1 Cup Cherry Tomatoes
  • 4 sprigs Fresh Basil torn into shreds
  • 3 Radish thinly sliced

Green Pesto!

  • 2 Cups Fresh Spinach
  • 1 Cup Fresh Basil
  • 1/4 Cup Walnuts
  • 1 oz Grated Aged Parmesan Cheese
  • 1 Garlic Clove Chopped
  • 2 tsp Lemon Juice
  • 1/4 tsp crushed red pepper
  • 3 tbsp Olive Oil

Place spinach, walnuts, Parmesan cheese, garlic, lemon juice, and crushed red pepper in a food processor; process until finely chopped. With processor on, slowly add olive oil. (Add 2 tb warm water if needed to smooth the mixture).


    • Simply layer the salad ingredients, toss and serve with a drizzle of EVOO & Pesto!

    If Peaches are more your jam, you can easily swap the cantaloupe for 3 fresh peaches cut into cubes!! I love to add a cup of toasted pecans with this version!! The savory-sweet flavor is a party in my mouth!!
