Sweet Potato Avocado Toast & Kale

Y’all this #tastylunch took 5 minutes and was sooooo delicious!! I batch roasted sliced sweet potatoes 🍠 earlier this week, and finally used the last two slices today!! I love the versatility and portability 🙌🏼

While my potato was toasting, I quickly sautéed kale with white onions, minced garlic and avocado oil for 3 minutes!! Next—retrieve your potato, smash 1/2 avocado 🥑 on top, drizzled with EVOO & sprinkle w red chili flakes & pumpkin seeds

After school Snack Situation!!

Every day after school I slice up a #seasonal fruit + a veggie and it’s usually devoured in minutes 🙏🏻❤️🙌🏼.

Both kids know I prefer they eat a “real” food before they can pick a pantry snack. MOST days this works like a charm and helps increase the number of plants 🌱 in their daily diet.

Some days it’s a struggle 🤣 but I’m always after #progressnotperfection and I’m not giving up any time soon! The health of these two is just too important to give in 💕💕🎉

Today it’s a win and I love it!! But it took years to get here! If you are having trouble getting your kiddos to eat their fruits & veggies, let me know! Sometimes simple swaps & different presentation styles make all the difference!

I made this #spicy #warming #kalecurrymushroom #soup last night, and it hit the spot!! I’m so thankful there are leftovers, as it’s even better reheated!

Couple notes—

For the mushrooms, I used a 1 oz bag of organic dried mushrooms by FungusAmongUs. They were delicious and I can’t believe I haven’t been stocking these in the pantry! 😱If you’d rather use fresh mushrooms 🍄 you need 1/2 lb.

For the curry-I used 1/2 a 12 oz jar of @mayakaimalfoods Jalfrezi Curry 😋🙌🏼🎉

Kale Curry Mushroom Soup

1 lb organic ground turkey
2 TB EVOO
16 oz chicken Bone Broth
10 oz water
7 oz Maya Kaimal Curry Simmer Sauce
3 celery stalks-diced
1 C diced white onion
1/4 C minced cilantro
2 C Chopped Kale 🥬
1 oz organic dried mushrooms
1 TB Turmeric
Juice of half a lemon
Salt & Pepper

Directions:
In a Dutch oven, heat oil, onions and celery and sauté for 4-5 minutes. Add the ground turkey and cilantro and continue to cook until turkey is cooked through. Add broth, water, lemon juice, Curry, mushrooms and all spices and simmer on med/low for 30 minutes. Add the kale during the last five minutes!!
