A Salad A Day Keeps the Doctor Away!

Are you a salad person? I pretty much live for salads!!! I dream up yummy flavor combinations and think of how different textures, temperatures and colors will blend together in a big ole bowl of greens!! Drizzling with pesto, lemon vinaigrette or a top off of tahini to finish it off! A Salad is basically my #selfcare in a bowl!

Salads make me happy!!! Turns out the happiness I gain from eating a salad is not all in my head… Researchers found that people who started eating eight servings of fruit and vegetables per day experienced an increase in happiness and overall life satisfaction! {Source}

Romaine Boat Salad

A Refreshing, Hydrating Salad the entire family will enjoy! Easy fork free side perfect for kiddos and BBQ's!
Course: Salad

Ingredients

  • 1 head Romaine Lettuce wash, dry and separate leaves
  • 1/2 Small Watermelon cubed
  • 2 Organic English Cucumbers diced
  • 1 Bunch of Fresh Scallions diced
  • 2 Heirloom Tomatoes cut in quarters

Cilantro, Pickled Onions, Salt & Pepper to taste~!

    Vinaigrette

    • 1/2 Cup Olive Oil Extra Virgin
    • 2 tbsp Lemon Juice
    • 1 tsp Dijon Mustard
    • 1/2 tsp Maple Syrup
    • 1 tbsp minced shallot

    Salt and pepper to taste

      Shaved Brussels Sprouts Salad

      The easiest side dish! I serve mine with grass-fed ground beef or turkey, but it compliments any protein or even just top a bed of arugula if you are plant based!

      Ingredients

      • 10 oz Bag of Shaved Brussels Sprouts
      • 3 cloves of garlic
      • 1 small red onion diced
      • 1 Heirloom Tomato cubed
      • 1 Pink Lady Apple Cubed
      • 1/2 Cup Walnuts
      • 2 tbsp Olive Oil
      • 1/4 Cup Chopped Parsley

      Dressing

      • 3 tbsp Olive oil
      • 2 tbsp Apple Cider Vinegar
      • 1 tbsp Lemon Juice
      • 1 tbsp Chopped Parsley

      Instructions

      • Saute garlic, onion and oil on low/medium for 2 minutes

      • Add Shredded Brussels sprouts and lightly cook until soft
      • Transfer mixture to a salad bowl and add chopped apple, tomato & walnuts. Toss

      • Dress, and garnish with chopped parsley, salt and pepper to taste!!

      Broccoli Slaw Salad

      How about them apples?! Make this crunchy little number for lunch {in minutes! It’s so satisfying and really yummy with shredded chicken!

      Broccoli Slaw Salad

      Easy, crunchy and travels well! I love making this in bulk and portioning into Mason Jar Salads. Serve with shredded chicken breast for some extra protein!

      Ingredients

      • 1 12 oz pkg Organic Broccoli Slaw
      • 1 Large Honey Crisp Apple cubed
      • 2 Persian Cucumbers sliced
      • 2 Celery Stalks diced
      • 1/4 C Pistachios

      Dressing::Whisk together!

      • 1/4 C Olive Oil
      • 2 tbsp ACV
      • 2 tbsp Tahini melted
      • 2 tbsp Orange Juice

      Smoked Salmon Salad

      Enjoy this "super food" salad comprised of wild caught smoked salmon, calcium rich spinach, hydrating vegetables and nourishing fats! It's filling enough for dinner and can totally works as a stand alone meal! No oven required!

      • 6 C Organic Spinach washed & dried
      • 4 oz Trader Joe's Wild Caught Smoked Salmon Serve 1 oz per bowl
      • 2 Organic Red Bell Peppers sliced
      • 4 Celery Stalks diced
      • 2 Organic English Cucumbers sliced
      • 2 Organic Belgium Endives sliced
      • 1/4 C Goji Berries
      • 4 Baked Sweet Potato Toasts
      • 1 Avocado
      • 1 tbsp pesto

      Top with Pickled Onions

        Tahini Mustard Dressing

        • 3/4 C Tahini melted
        • 1 clove minced garlic
        • 1 tbsp lemon juice
        • 1 tbsp dijon mustard
        • 1 tsp honey
        • 1/3 C hot water
        • 1/2 tsp pepper

        Heirloom Tomato Peach Salad

        The perfect salad for spring! When the peaches, tomatoes and berries are ripe, I can't help but combine them into a salad!! Enjoy this gorgeous salad and feel instantly happier!
        I serve this combo (sans Arugula and onions) to the kiddos. They devour it!

        • 4 C Organic Arugula
        • 2 Organic Peaches (local if possible!) cubed
        • 3 Organic Persian Cucumbers sliced
        • 2 Heirloom Tomatoes cut in quarters
        • 1/2 C Green Onions diced
        • 1/4 C Organic Raw Pecans diced
        • 1/4 C Red Onions diced
        • 1 tbsp Pesto

        Top with Tesse Mae Balsamic Vinaigrette, Salt & Pepper

          Simple, Seasonal and Nutrient Dense! Sit down for lunch and enjoy this salad! It's full of antioxidants and fiber and the flavor profile is delish!
          Servings: 2 adults

          Ingredients

          • 4 C Fresh Arugula
          • 3 Persian Cucumbers sliced
          • 1/2 C Cantaloupe cubed
          • 2 C Black Forbidden Rice (cooked) prepare per package instructions
          • 1 Avocado cubed

          Salt, Pepper, Pickled Onion to taste
