Happy fall yโ€™all! Iโ€™m pretty sure the fall season makes just about everyone happy! The chill in the air, the tree leaves starting to change color, and pumpkin spice everywhere, all the time!!! Fall is such a fun, cozy time to gather with friends and family for a yummy meal. The Autumnal harvest provides a beautiful array of color, and plentiful assortment of squash, potatoes, pumpkins, apples and more!  There has never been a simpler time of year to eat the rainbow!!

Iโ€™ve put together a fall inspired recipe list that will motivate you to use some of our glorious, seasonal produceโ€ฆ And then relish in how amazing your house smells!! ๐Ÿ™‚

Starbucks put this drink on the map in 2003, and Iโ€™m not sure there has ever been a coffee drink with a greater impact on popular culture! Turkey Chili By Happy Dinner ATX

Nothing screams fall more to me than Chili! I love switching it up and varying my chili recipe. Sometimes I use chicken, other times grass-fed, ground beef.  If you are in the mood to move away from your traditional โ€œgo-toโ€ recipe Give this one a try! Itโ€™s really healthy and anti-inflammatory but also delicious! I love using Eden Organic Kidney Beans in my chili recipes! Eden Organic Beans are the best y’all!! They are Organic, Non-GMO & PBA free. Plus Eden washes, soaks, sprouts and pressure cooks all of their beans before they are canned! This process inactivates the lectins making the beans easier to digest! They are the only brand of beans I will buy!!!

Happy Dinner Turkey Chili

Equipment

  • Dutch Oven

Ingredients

  • 3 tbsp Olive Oil
  • 1 tbsp Ghee
  • 1 20 FL oz Trader Joe's Organic Chicken Bone Broth
  • 1 1/2 lbs Organic Ground Turkey
  • 1 small sweet white onion diced
  • 1 red bell pepper diced
  • 3 large celery stalks diced
  • 1 can Eden Organic Kidney Beans
  • 1 can Eden Organic Blacnk Beans
  • 1 can Muir Glen Fire Roasted Diced Tomatoes

A few shakes of Thyme, Trader Joe's Umami seasoning, + Salt & Pepper

    Avocado, Scallions and Pico De Gallo for topping

      Instructions

      • Heat Olive oil & Ghee in your Dutch Oven
      • Add onions and saute for 3-5 minutes
      • Add ground turkey to the dutch oven and season with Thyme, Unami Seasoning, Salt & Pepper to taste
      • Add bell peppers & celery and continue to saute until turkey is cooked through
      • Add the Chicken Bone Broth, beans and canned tomatoes. Turn down heat to Medium and allow Chili to simmer for 30-60 minutes.
      • Enjoy with a big chunk of GF Cornbread, scallions, avocado and a scoop of pico de gallo
