Pantry + Freezer Dinner Ideas To Get You Through COVID-19

How are y’all doing? We are trying to make the best of the social distance situation in our home. Taking things day by day, and trying to find joy in the small things + appreciate the extra time we have together. Truth be told, some moments are better than others… I’ve had several moments of panic as I try to navigate through our new normal. Deep breaths, reading, movement and sunshine have been helpful in bringing me back to neutral!

From the looks of it, we will most certainly be eating ALL of our meals at home for the foreseeable future. With that in mind I wanted to provide you with a few dinner ideas that hopefully excite your family and your dinner table.

Take this extra time to enjoy the cooking process. Light a candle, pour a glass of wine, turn on some tunes and have fun in the kitchen with your family. Breakout the “good china” and slowly savor your meal. There is really no need to rush anymore!

Because the fresh produce and meat supply is limited lately, lets focus on healthy, nutrient dense pantry staples that will fuel your family. Here’s what I’ve been {trying} to stock up on!

Dry Goods

  • Variety of Potatoes, Peppers, Avocado, Bananas, Knob of ginger
  • Coconut oil, EVOO, Avocado oil, Ghee, Parm Cheese
  • Variety of Beans, Lentils & Dried Mushrooms
  • Quinoa, Rice, Gluten Free Oats, Almond Flour, Coconut Flour
  • Canned Tuna/Salmon, Olives, Artichoke Hearts, Pickled Veggies, Red Peppers
  • Collagen Protein, Pancake Mix, Syrup, Manuka Honey, Tea, Coffee Beans!!!!
  • Variety of Pasta, Soba/Kelp Noodles, Pasta Sauce, Salsa Verde, Pesto,
  • Marshmallows, Cereal, Chocolate Bars/Chips, Granola, Graham Crackers
  • Shelf stable DF Milk, Coconut Milk Cans, Shelf Stable Coffee Creamer
  • Applesauce, Canned Pumpkin, Dried Fruit, Dates!!, Raw Nuts, Nut Butters, Fruit Spread
  • ACV, Mustard, Ketchup, Coconut Aminos, Balsamic, Tahini, *Chickpeas for hummus, Capers, Nutritional Yeast
  • Popcorn, Chips, Veggie Chips, Lara Bars, Turkey Jerky, Fruit Strips

Frozen Goods

  • Turkey Burgers/Grass fed burgers/Veggie burgers
  • Sirloin Steaks/Ground Meat/Whole Chicken
  • Wild Caught Scallops or shrimp (great with Angel hair pasta and capers!)
  • Wild Caught Fish (Mahi Mahi for tacos or Salmon)
  • Organic GF chicken tenders
  • Veggies: edamame, peas, cauliflower, carrots, spinach, kale, green beans, broccoli
  • Riced Veggies: Cauliflower/Sweet Potato Rice/Broccoli Rice
  • Zucchini & Carrot Spirals (Trader Joe’s)
  • Cauliflower or Kale Gnocci (Trader Joe’s)
  • Cauliflower Crust Pizza
  • Siete Tortillas
  • Dr. Praeger’s Broccoli Littles
  • Frozen Berries/Coconut Chunks
  • Bone Broth
  • Capello’s Grain free pasta & lasagna sheets
  • Soozy’s Grain free muffins
  • Birch Benders Paleo Frozen Waffles

  • Good Food Made Simple Pancake Puffs
  • DF ice cream, Good Pops and Paleo cookie dough!

Don’t forget citrus fruits, herbs, onions, garlic & spices y’all! They have a long shelf life and will elevate even the most mundane bowl of rice! Treat yourself to lemons, basil, cilantro, rosemary, mint, dill, white onions etc.

On to the dinner recipe’s. Let’s share happy dinners with each other and get through this together!! Movement, social connection and meal time will be my silver lining through all of this.

Curried Chickpea Cauliflower by Cotter Crunch

It’s dairy and gluten free and so easy to layer, bake and forget it! Your family will love the cheesy, comforting flavor!! It saves well too!
Pantry/Freezer Items: frozen cauliflower, frozen spinach, frozen white rice, curry, garlic and a 15 oz can of chick peas,

Black Bean Burgers by Detoxinista

If beef burgers have been out of stock in your area, give vegan- black bean burgers a try! Pantry Items: Canned Black beans, rolled oats, oat flour, BBQ sauce, sweet potato (or canned pumpkin) and spices.

Soba Noodle Salad with Edamame by Eating With Bird Food

We prefer Kelp noodles over Soba, but either way this Noodle Salad is a divine combo that will cure your something salty craving!
Pantry/Freezer Items: Soba or kelp noodles. Frozen broccoli, Frozen edamame, peanut butter, sesame seeds, rice vinegar, maple syrup, oil, coconut aminos, lime juice. Fresh red peppers, fresh red cabbage and green onions if you can swing it!

Roasted Cauliflower Tacos by Camille Styles

We simply can’t give up taco night over here, and I love this cauli taco recipe by Camille Styles! Amazing flavor and you can use your pantry and freezer to put these tasty tacos together!
Pantry/Freezer Items: Frozen cauliflower, Siete tortillas or taco shells, pickled red onions, jar of roasted red peppers, nuts, garlic, spices.

If you’ve had a full day of work and home schooling your children, this will be the meal for you! Just throw everything in the slow cooker and its done!

Dairy Free Whole30 Potato Salad

This potato salad is delicious with eggs and bacon bits, but actually has amazing flavor without! I love to serve this along side a butter leaf salad and a glass of white wine!
