Paleo Peach Breakfast Pizza

Peach season has arrived in Austin! Isn’t that Peachy?!

If you are looking for a breakfast recipe your entire family will love, is super easy, seasonal and tastes decadent, look no further!!!

Paleo Peach Breakfast Pizza by Happy Dinner ATX

The time saving secret behind these breakfast {or dessert} pizzas is Simple Mills Pancake Mix. But the real WOW factor comes from the juicy, fresh, seasonal peaches and the creamy texture of Coconut Vanilla Bean Cashew Butter.

To make your own breakfast pizzas, oil your 10″ fry pan and simply make 2 extra large pancakes using the 1 1/2 Cups of Mix Pancake directions. I’ve included the package instructions below. I use 2 eggs, 3 TB nut milk and 2 TB of coconut oil.

Once your pancakes are ready, simply plate and slather your cashew butter {coconut yogurt is a delicious topping too!}. Add your sliced peaches and top with hemp seeds and fresh basil!! Slice the pancakes like a pizza and serve with a side of seasonally fresh berries and a couple sprigs of mint. It’s a Heavenly combination that will have your family coming back for more!
