I LOVE all things pumpkin, and I know I’m not alone!! I adore the simple, creamy consistency and the subtly sweet and spicy flavor that pumpkin brings to your basic recipes. It just feels so comforting, making it the perfect fall flavor.
I’m usually not inspired to use pumpkin on an annual basis, so come October 1st, it’s full throttle pumpkin in our kitchen!!
Sorry to break the news, but I’m just not a pumpkin spice latte kind of girl. Pumpkin + Coffee doesn’t do it for me
{Don’t mess with my bold cold brew Y’all!!}.
I prefer to use pumpkin in things like paleo pancakes, pumpkin muffins, pumpkin smoothies, these gluten free pumpkin squares , creamy pumpkin soup & pumpkin overnight oats!! So that’s the direction we are headed here.

Even better, they are grain-free, dairy-free, gluten-free and naturally-sweetened! Perfect for afterschool snacks or a quick bus-stop breakfast! We have been making them for YEARS!! I love to make a batch and freeze half for busy weeks when there isn’t time to prep.
Pumpkin Spice Muffins by Detoxinista

If you can believe it, these muffins are made without ANY flour or oil! The consistency is light, fluffy and delicious, just the way we like our muffins! These are a bit more advanced on the muffin making scale so give yourself some grace. I recommend you refrigerate your dough for 10 minutes before baking, and do not use muffin liners. Simply spray a bit of coconut oil in your muffin tin.
To make these Paleo Pumpkin Muffins, you’ll need only 9 ingredients
- Almond Butter (Use a drippy all-natural one)
- Ground Flax Seed
- Pumpkin Puree (I use canned, but here’s Detoxinista’s recipe on how to roast pumpkin to make puree)
- Coconut Sugar
- Eggs
- Baking Powder
- Pumpkin Pie Spice
- Salt
- Chopped Walnuts/Chocolate Chips
Pumpkin Pie Smoothie by Happy Dinner ATX

This creamy Pumpkin Pie smoothie tastes delicious, includes a sneaky green and prepares your body for the day with balanced nutrition!
Ingredients
- Coconut milk – Canned varieties give it a creamier consistency, but feel free to use a carton of coconut, hemp or almond milk–it’s still delish.
- Fresh Spinach–Using fresh lends a creamy/fluffy consistency
- Pumpkin puree – use either canned pumpkin or canned butternut squash
- Cashew Butter– Be sure to use an organic, unsweetened nut butter
- Medjool dates – I love the organic/pitted version by Natural Delights. I use one in my smoothie, but feel free to use two for a sweeter effect. If you don’t have dates you can also use 1/2 a banana
- Vanilla Collagen Protein–Gut Boosting Amino Acids and Protein. I like Ancient Nutrition or Primal Kitchen
- Hemp seeds – I added hemp seeds for an added omega & protein boost
- Bee Pollen–I top most our smoothies with Bee Pollen for the extra vitamins, minerals and antioxidants. It’s also incredible for decreasing inflammation and increasing immune function!
Pumpkin Pie Smoothie
Ingredients
- 2 Cups Fresh Spinach
- 1 Cup Coconut Milk Canned or from a carton
- 1/2 Cup Pumpkin Puree
- 1 Date *Use 2 for a sweeter flavor
- 1 tbsp Cashew Butter *all natural no sweetener
- 1 tsp Pumpkin Spice
- 1 tbsp Hemp Seeds
- 1 Scoop Vanilla Collagen Protein Ancient Nutrition
- 2 Ice Cubes
- 1 tbsp Bee Pollen Topping for smoothie
Instructions
- Place all ingredients in your high speed blender and blend until fully combined in a creamy consistency. Pour in your favorite mason jar, top with Bee Pollen and enjoy with a straw or a spoon!~

This slow cooker pumpkin soup is an easy and comforting meal, made with ingredients you probably already have on hand. You can throw it together in about 10 minutes and then walk away and let your slow cooker do the cooking while you prep a fall flavored kale salad! Perfect for a weeknight meal.
Turkey-Pumpkin Chili
I can’t think of anything more “fall” than Pumpkins & Chili!!! Mix them together and you get a super seasonal, easy dinner!! This recipe has a slightly smoky flavor from the paprika {replace w/ coriander or cumin if it’s not your vibe!}, but it’s creamy enough from the white beans and pumpkin that your kids will love it! I like to serve ours with sliced radish, sliced red or green onions, dairy free sour cream and fresh diced cilantro.
