Zander has soccer THREE days per week + piano. Zia has piano, dance + soccer and Max and I are juggling work, carpool, “tutoring” and trying to enjoy life! {Right?!)
I’m giving myself a pass on complex, innovative recipes at the moment. Now is the time to honor simple meals that are delicious and get the job done. Meals that don’t require a lot of time or effort. Meals I can make ahead of time so we aren’t scrambling through the fridge, starving at 6:30 PM.
The goals is to nourish ourselves with real, nutrient dense food as simply as possible, not drain every ounce of energy from our body,mind and spirit. Cheers to Ease, to Simplicity, to feeling light this fall season.

Mediterranean Braised Chicken Thighs by Tasting Table
One Pot Wonder!! I usually make this early in the day when I have more time. Then simply leave the prepared dish in my Dutch Oven with a lid on it (stove off). Just before dinner, I bring it back to medium heat for 5-10 minutes and it’s ready to serve!!!
Add a side of arugula and viola!

I use organic, frozen corn to save time and also substitute Violife Dairy Free cheese for the shredded cheese the recipe calls for.

Happy Dinner Turkey Chili
Nothing like coming home to a big pot of chili! I make mine in the Dutch Oven but it’s also yummy in a Slow Cooker!!
Happy Dinner Turkey Chili
Equipment
- Dutch Oven
Ingredients
- 3 tbsp Olive Oil
- 1 tbsp Ghee
- 1 20 FL oz Trader Joe's Organic Chicken Bone Broth
- 1 1/2 lbs Organic Ground Turkey
- 1 small sweet white onion diced
- 1 red bell pepper diced
- 3 large celery stalks diced
- 1 can Eden Organic Kidney Beans
- 1 can Eden Organic Blacnk Beans
- 1 can Muir Glen Fire Roasted Diced Tomatoes
A few shakes of Thyme, Trader Joe's Umami seasoning, + Salt & Pepper
Avocado, Scallions and Pico De Gallo for topping
Instructions
- Heat Olive oil & Ghee in your Dutch Oven
- Add onions and saute for 3-5 minutes
- Add ground turkey to the dutch oven and season with Thyme, Unami Seasoning, Salt & Pepper to taste
- Add bell peppers & celery and continue to saute until turkey is cooked through
- Add the Chicken Bone Broth, beans and canned tomatoes. Turn down heat to Medium and allow Chili to simmer for 30-60 minutes.
- Enjoy with a big chunk of GF Cornbread, scallions, avocado and a scoop of pico de gallo
